Ingredients
- 1 lamb shoulder roast
- 3 garlic cloves, minced
- 3 tbs mustard seeds
- 1 tbs fresh rosemary
- 1 lemons, sliced & zested
- 3 tbs oil
Method:
- Mix together mustard, garlic, rosemary, lemon zest and oil. Spoon over lamb and season.
- Place lemon slices in baking tray and lay lamb on top. Allow to sit for at least 20 minutes before roasting.
- Cook for approximately 1½ hours in a 200°C oven, depending on weight.
- Cover with foil and allow to rest for 15-20 minutes before carving.
