Ingredients
- 170g butter
- ½ cup caster sugar
- 1 egg
- ½ tsp vanilla essence
- 1 tbsp honey
- 1 cup self raising flour
- 1½ cups plain flour
- Icing sugar, to serve
Filling
- 2½ cups mixed dried fruit
- 1/4 cup sweet sherry (or orange juice)
- 1/4 cup brown sugar
- 2 tsp ground cinnamon
- 1 tsp ground nutmeg
Serves 12 | Cooking time 50 mins
Method:
- Preheat the oven to 200°C (180°C fan-forced). Grease a 3cm deep 17 x 28cm baking tray and line with baking paper
- Combine all the filling ingredients in a medium saucepan. Heat over high heat, stirring occasionally for 5-7 mins until sugar has melted and mixture is almost boiling. Remove from the heat and leave to cool
- Place butter, sugar, flour, egg, vanilla and honey in food processor and process until a thick dough forms. Lightly flour a large chopping board or bench top and knead dough until smooth. Cut the dough in half, roll out one piece and press into the prepared tray.
- Spread filling over base. Roll out the remaining dough and place over filling, trimming to size. Prick the with a fork 20 times.
- Bake for 10 mins, then reduce temperature to 180°C (160°C fan-forced) and cook for a further 20 mins or until golden.
- Cool completely, dust with icing sugar and cut into slices.
