Ingredients
- 3 rashers shortcut bacon, diced
- 1 bunch asparagus, bottom stems trimmed
- 1/4 tsp salt
- 1/2 tsp black pepper
- 1 tbsp extra virgin olive oil
- 4 tbsp finely grated parmesan cheese, divided
Method:
- Preheat oven to 200 degrees Celsius.
- Heat a pan over medium heat and add the bacon. Cook until the bacon just begins to crisp.
- Remove the bacon with a slotted spoon and place on a paper towel-lined plate to drain.
- Place the asparagus on a baking tray lined with baking paper. Drizzle with a tablespoon of olive oil. Sprinkle with salt and pepper and toss with hands to coat. Sprinkle on 2 tablespoons of parmesan and all the bacon.
- Roast for 20 to 25 minutes or until the asparagus becomes golden and begins to crisp. Remove from oven and sprinkle with the remaining 2 tablespoons of parmesan before serving.
