Matt Golinski’s – Zucchini, Ham and Cheese Fritters

These little guys make great snacks, a light lunch, or finger food for a party.
Leave the diced ham out for a vegetarian version..

Matt Holinski Light

Makes 24 – 30 small fritters

  • 2 cups grated zucchini
  • 100gm diced ham
  • 200gm ricotta cheese
  • 2 eggs
  • ½ cup plain flour
  • 50gm grated Parmesan
  • salt and pepper
  • pinch nutmeg
  • oil for frying

Method

Combine the zucchini, ham, ricotta, eggs, flour, Parmesan, salt, pepper and nutmeg and stir until well combined.

Fry heaped teaspoons of the fritter mix in hot oil until crispy and golden.
